Fluffy Pancakes

Ingredients

  • 1¼ cups All-Purpose Flour
  • 1 TBSP Baking Powder
  • 1 tsp Salt
  • 1 tbsp Sugar
  • 3 TBSP Butter, melted
  • 1½ cups Milk
  • 1 Egg

Directions

  1. Heat a lightly oiled griddle or frying pan over medium heat. If you are using cast iron, reduce to low before cooking.
  2. Melt butter in glass mixing bowl
  3. Add egg, sugar and salt and whisk together
  4. Add flour, baking powder and milk, in that order
  5. Whisk altogether. If mixture seems too thick, add more milk a few tablespoons at a time. If it seems too thin, wait a few minutes to allow the baking powder to activate. If it continues to be thin, add a few tablespoons of flour.
  6. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot
