Ingredients

  • 1 1/4 cups old-fashioned rolled oats
  • 1 1/4 cups unsweetened applesauce
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 4 Tablespoons butter, melted
  • 1/3 cup granulated sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/3 cup mini chocolate chips

Directions

  1. 1. Preheat oven to 375F. Line a 12-cup muffin tin with liners or grease generously with butter.
  2. In a medium bowl, stir together the oats, applesauce, milk, egg, vanilla, butter and sugar. Mix with whisk.
  3. Add flour, baking powder, baking soda, cinnamon, salt. Stir with a spatula until combined (don’t overmix!)
  4. Use an ice cream coop to fill the muffin cups. Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean. Don’t over-bake.
