Let's Get Started
Ingredients
2 TBSP Olive Oil or Butter
½ Large Onion – roughly chopped
4 Cloves of Garlic
3lbs or 8 cups of Candy Roaster Squash, peeled and chopped
2-3 Sweet Apples, cored, peeled and chopped
1½ TBSP Garam Masala
1½ tsp Coriander
1½ tsp Celtic Salt
4 cups of Chicken/Veggie broth
½ cup Sour Cream or Yogurt or Coconut Cream
2-4 TBSP Honey (to taste)
Directions
Cook Onion and Garlic in oil/butter while you peel and chop the apples.
Add Apples, Spices and cover while you chop up the squash
Add Candy Roaster Squash cut into 1” cubes
Add Broth
Once you can put a knife thru a squash, put in a blender to puree.
Add Sour Cream/Yogurt/Coconut Cream and Honey
Garnish with pumpkin seeds, salt to taste and Enjoy!
Notes: You can add some cayenne pepper if you like some heat. Sprinkle with more garlic powder at the end to boost flavor. If you are making vegan, exchange each tablespoon of honey for 1 sweet apple, peeled, cored and chopped!
