Peanut Butter Cookie Larabar

Let's Get Started

Ingredients

  • 15 organic dates, pitted (buy with pits)
  • 1 cup of organic dry roasted peanuts (no salt)
  • 1/4 tsp Redmonds Salt or Celtic Sea Salt
  • 1/2 tsp organic vanilla (optional)

Directions

  1. In a food processor, add peanuts and salt (and vanilla)
  2. Mix on high til peanuts are broken down.
  3. Start added 1-2 dates at a time until you have no more dates left.
  4. Keep it going until a dough forms (it will start to clump together). Around 3-5 minutes.
  5. In a bread loaf pan, press dough until evenly distributed. Cover with a cover or parchment.
  6. Place in fridge or freezer for 2 hours.
  7. Enjoy!!! Store in fridge in an airtight container.
***You can double or triple this (Do it in batches) and put in a 9×13 pan. We snack on this all week!
